Chef Marcus Wareing is set to build on the success of his eponymous restaurant in The Berkeley with The Gilbert Scott which opens in the St. Pancras Renaissance today. The vast Victorian hotel, designed by Giles Gilbert Scott, lay derelict for years and was close to demolition before its recent refurb. Open for breakfast, lunch and dinner, Wareing’s new brasserie resurrects many lesser-seen British dishes such as jugged steak, Harrogate loaf and tweed kettle (a Scottish salmon hash). Booking is advised but not essential.
