Take a butcher’s at Jamie Oliver’s Barbecoa

Meat lovers who’ve always wanted to know how to carve out the best cuts – be it steak, lamb chops or chicken breast fillets – can now take butchery classes at Jamie Oliver’s Barbecoa butcher’s shop in the City. It’s not the first time a butcher has laid on butchery classes – the renowned Ginger Pig butchers, among others, have been offering them for a while –  but now Jamie’s on the meat wagon too. The butchery at Barbecoa is offering masterclasses that teach meat enthusiasts everything to get to grips with nose-to-tail eating. There’s a choice of three different 90-minute classes: the ‘whole hog’ (where participants learn how to break down a side of pork and bone out a leg of pork), ‘beefed up’ (incuding steak and cote de boeuf preparation) and ‘lamb chopping’ (combining lamb and chicken skills, including breaking down a whole lamb and de-boning a chicken). The classes are strictly about carving, chopping and cutting, not about cooking. At the end of the sessions, participants can take their cuts of meat home. Classes can hold one to nine participants and need to be booked on demand 24 hours in advance. Anne Faber
