Go the whole hog at The Russet this nose-to-tail week

Blanche and ShockIsn’t this offally good: as part of nose-to-tail fortnight (a celebration of offal and other unloved cuts of meat), The Russet will be cooking a special four-course meal in Hackney Downs Studios. In keeping with the spirit of the campaign, which is designed to promote a more thoughtful, less wasteful use of meat, the kitchen will be making use of a massive wild boar’s head as well as a number of other ‘weird bits’, to show that they can be just as delicious as more mainstream cuts.
