If you’ve ever tried to make maki with out a sushi-rolling mat you’ll know it’s a messy business. But when life gives you sushi rice and nothing to roll it with, then get out the clingfilm instead and make round temari sushi instead. This is just one of the many techniques and tricks that cookery teacher Akemi Yokoyama taught us at her ‘Dinner Party Sushi’ class. Taking place at a new Japanese cookery school near Liverpool Street (Sozai), this is one of many classes on offer.
