Bigger isn’t always better: we’re all about short drinks menus these days

Marco Arrigo, co-founder of the tiny new Bar Termini in Soho, tells a story of being in a gathering of baristas from a well known coffee chain and hearing people claim that they can make 2,000 or more different drinks. Then someone asks him: how many can you make? And he answers: four.

We’ve recently seen a lot of drinks lists as long as a novella. The cocktail menu at LAB, a bar we love, offers over 100. But we grow increasingly fond of the short, focused list: and they don’t get much more focused than those that Bar Termini serves (to 25 customers maximum at a time). Eight cocktails from Tony Conigliaro, the magician behind 69 Colebrook Row and Zetter Town House. And, of course, four coffees from Marco Arrigo. By Richard Ehrlich
