Guest chefs bring perfect paninis to Rawduck in Hackney

Hackney restaurant and wine bar Rawduck has invited Mark Hix round for a one-night stand. The man behind Tramshed is set to be the first in a series of London culinary superstars to host a one-off evening at the ever-popular venue, with some similarly heavyweight chefs due to follow. Using nothing more than the venue’s sandwich press and espresso machine, Hix will be preparing a duck-themed à la carte menu of tasting dishes, such as prawn quackers (pun intended), scotch duck egg, or duck salad with pickled girolles. Cocktails will be shaken and stirred by Black Cow Vodka, a spirit distilled from cow’s milk and made in Dorset. Hix takes over Rawduck on September 3 from 6.30pm onwards, and booking is advised. Future ‘Chef on the Panini’ cooks will include artists Tim Noble and Sue Webster, author and cook Jojo Tulloh, and chef Nuno Mendes.
